It all started in 2009 when our founder, Maria Santos, left her home state of Sonora, Mexico, carrying recipes passed down through three generations. She set up a small counter in Greenwood Village with a big dream: to share the real taste of Mexico with Colorado.
Word spread fast. Neighbors became regulars, regulars became family. Today, Cafe Rio is a beloved institution — a place where hand-crafted burritos, slow-cooked proteins, and house-made salsas tell a story of heritage, hard work, and genuine love for food. Every item on our menu is made fresh daily with the highest-quality ingredients we can source.

2012
First Full Restaurant
After three years of rapid growth, Cafe Rio opens its first full-service dining room at 9351 E Arapahoe Rd. The expanded menu introduces enchiladas, tacos, and fresh agua frescas.
2015
Catering & Events Launch
Cafe Rio launches its catering division, serving corporate events, weddings, and community gatherings across the Denver metro area. Over 500 events catered in the first year alone.
2018
Online Ordering Goes Live
Cafe Rio launches its online ordering platform, making it easier than ever for customers to enjoy authentic Mexican food at home or at the office. Order volume grows 40% in six months.
2021
Franchise Program Launched
