The Beginning

Cafe Rio was born from a passion for bold, authentic Mexican flavors served with warmth and care. As the caferio destination of choice in Greenwood Village and beyond, we believe great food brings people together. Every dish we serve carries our commitment to freshness, tradition, and community.
Where the caferio journey began — Greenwood Village, CO
It all started in 2009 when our founder, Maria Santos, left her home state of Sonora, Mexico, carrying recipes passed down through three generations. She set up a small counter in Greenwood Village with a big dream: to share the real taste of Mexico with Colorado.
Word spread fast. Neighbors became regulars, regulars became family. Today, Cafe Rio is a beloved institution — a place where hand-crafted burritos, slow-cooked proteins, and house-made salsas tell a story of heritage, hard work, and genuine love for food. Every item on our menu is made fresh daily with the highest-quality ingredients we can source.
We prepare all salsas, guacamole, and marinades in-house every morning — no shortcuts, ever.
We partner with Colorado farms and suppliers to bring the freshest produce to your plate.
From school fundraisers to local events, Cafe Rio gives back to the neighborhoods we serve.
Everything we do at Cafe Rio is guided by a clear purpose and values that shape every meal, every interaction, every decision.
To serve bold, authentic Mexican food made with fresh, quality ingredients — creating a welcoming place where every guest feels like family. We exist to nourish the community, celebrate culture, and deliver flavors that make every meal memorable.
To become the most trusted name in fresh Mexican food across the United States — expanding the caferio experience to new communities while staying true to the authentic roots, family recipes, and warm hospitality that made us who we are today.
We never compromise on freshness. Every ingredient is sourced carefully and prepared daily so you always taste the difference.
Our recipes honor traditional Mexican cooking methods — slow-roasted meats, hand-ground spices, and generations of culinary wisdom.
We are part of the neighborhoods we serve. We invest in people, support local causes, and treat every guest like a neighbor.
From the first bite to the last, we pursue excellence in every dish, every service moment, and every experience we create.
